Skewers of Grilled Shrimp with a Fresh Corn and Tomato Salad
A nice grilled shrimp kabobs recipe to try !
Ingredients
  • 1 cup olive oil
  • 1/2 cup Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon hot sauce
  • 1/2 teaspoon minced garlic
  • Salt
  • Freshly ground black pepper
  • 24 medium shrimp, head and tail in tact and the shell from the body removed
  • 24 wooden skewers, soaked in water
  • 2 cups fresh sweet corn kernels (from 2 medium-size ears), blanched
  • 2 tablespoons chopped fresh basil leaves
  • 1/2 cup chopped red onion
  • 1 pint cherry tomatoes, halved
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped yellow bell pepper
  • 1 pound fresh asparagus, cleaned and roasted until tender
  • 2 tablespoons chopped green onions, green part only
INSTRUCTIONS
In a small mixing bowl, combine the olive oil, mustard, lemon juice, hot sauce, and garlic. Season with salt and pepper. Whisk to blend well. Season the shrimp with salt and pepper. Place 2 prawns on each skewer and place in a large resealable plastic bag. Pour half of the dressing over the shrimp, seal the bag and shake several times to evenly distribute the dressing over each prawn. Place in the refrigerator and allow to marinate for 1 hour. Remove from the bag and bring to room temperature. Preheat the grill. Place skewers on the grill and cook for 2 to 3 minutes on each side, or until the prawns turn bright pink and their tails curl in. In a medium mixing bowl, combine the corn, basil, onion, tomatoes, and bell pepper. Add the remaining dressing and toss to mix. Cover and chill for at least 2 hours before serving. Using 3 to 6 spears of asparagus, form a triangle in the center of each serving plate. Spoon the corn and tomato mixture in the center of each plate. Lay 2 to 3 skewers on top of the salad. Garnish with green onions.

Grilled Shrimp Kabobs with Jalapeno Butter

Ingredients
  • 16 large shrimp, peeled and deveined
  • 1 large mango, peeled and cut into 12 1-inch chunks
  • 1 red pepper, cut into 12 slices
  • 1 lime, cut into 8 pieces- quartered then halved
  • 1 small red onion, cut into 8 pieces
  • 1 tablespoon olive oil
  • Salt and pepper
  • For the jalapeno butter:
  • 4 ounces softened, unsalted butter
  • 1/2 teaspoon ground cumin
  • 1 tablespoon chopped cilantro
  • 1/2 teaspoon finely chopped jalapeno
INSTRUCTIONS
Preheat grill or broiler. In a bowl toss the shrimp with salt and pepper. Thread the shrimp and vegetables onto the skewers. Each skewer has 4 shrimp, 2 limes, 2 onions, 3 peppers, and 3 mango pieces. Brush the vegetables thoroughly with olive oil, sprinkle with salt and pepper. Place on the grill and cook for 4 minutes on one side. Meanwhile prepare the jalapeno butter. In a bowl combine all ingredients. Then using a pastry brush, generously apply the butter to all sides of the kabobs, and then flip over and cook another 4 minutes. The grilled shrimp kabobs is ready to serve...nice ! Enjoy it !

Hawaiian Grilled Coconut Shrimp Skewers

Hawaiian Grilled Coconut Shrimp Skewers
Try this nice grilled shrimp kabobs..!
INGREDIENTS
Marinade
  • 1 can cup coconut milk (reserving 3 tablespoons for later)
  • ¼ cup pineapple juice
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, finely chopped
  • 24 jumbo shrimp - raw, shell removed (tails can be left on)
  • 1/4 cup unsalted butter
  • 3 tablespoons coconut milk
  • 2 tablespoons sweet shredded coconut
  • 1 teaspoon dark rum, optional
Approx. 12 Fresh Pineapple cubes

INSTRUCTIONS:
Mix marinade ingredients together and marinate shrimp for about 4-6 hours prior to cooking. After marinating shrimp, soften butter and mix with coconut milk, shredded coconut, and dark rum, if desired. Blend together well. Skewer shrimp onto skewers, adding a pineapple cube in between every other shrimp. Cook over open flame or under a hot broiler 3 to 4 minutes on each side. After turning once, brush with butter mixture. Continue cooking until done.
